As the salmon fisheries continue to produce some fairly good fishing along the coast, Strait of Juan de Fuca and clear into Puget Sound, I'd like to point out a refreshing salmon recipe to beat the summer time heat. OK well the heat will hopefully arrive soon in the Pacific Northwest to get that persistent moss of our backs, but this salmon dish works well in all kinds of weather.
Salmon fillets with Peach Salsa
Ingredients
Four 8 to 10 ounce salmon fillets
Sea salt and cracked black pepper
Olive oil
Three to four firm yellow peaches
1/3 cup of red bell peppers
1/3 cup of green bell peppers
1/3 cup of red onions
1/3 cup of fresh cilantro
1/3 cup of green onions
Two jalapenos
1 teaspoon of sugar
Directions
Preheat oven to 350 degrees
Drizzle olive oil on salmon fillets coating both sides.
Sprinkle salt and pepper to taste.
Place salmon on broiler pan and bake for 10 to 13 minutes depending on thickness of salmon or until done.
Prepare the salsa
Peel the skin from peaches and chop into small pieces. Finely diced red and green peppers and red onions.
Chop the cilantro and green onions, jalapenos and slice (remove seeds with a sweet flavor).
To prepare salsa, combine all ingredients in a bowl with sugar and let cool for two hours. The salsa can be used with a variety of other fish too.
